Patate irlandesi - Colcannon
Ecco la mia ricetta preferita del colcannon, il modo migliore che gli irlandesi hanno per "uccidere" le patate:
4 tablespoons of butter; 4 minced onions, leeks, or scallions; 4 tablespoons of milk; 2 cups of cooked mashed potatoes; 3 cups of cooked cabbage.
Tip: wonderful served with boiled ham.
Heat the butter in a pan until foaming. Add the onion, leek or scallion and sauté until soft.
Add the milk and the well-mashed potatoes and stir until heated through.
Chop the cabbage finely and beat into the mixture over a low heat until all the mixture is pale green and fluffy.
Io ho una versione senza frittura: ovvero, le cipolline (leeks) fatele bollire leggermente (tagliate finemente)
nel latte in un pentolino, poi aggiungete lentamente il latte alle patate, ed il burro fuso a parte.
Nella ricetta omettono il sale e pepe (a piacere) ed un pizzico di noce moscata che secondo me sta benissimo.
Badate che NON deve venire liquido ma abbastanza consistente (è un contorno, anche se io lo mangio come piatto unico).
È un piatto invernale. Buonissimo.
