Hmmm... I'd translate "Yes I know that I'm a doting mother" as "Si lo so, sono una madre amorevole.".

Did you need a literal translation or the extended meaning of the sentence?

Il mio/ La mia parente preferito/a.

So far I've struggled to write this. I know it's basic. I know the accent should be in the other direction but I don't know how to do that yet.

Il mio parente preferito é mio figlio _______. É il mio tesoro. É sono nato a Dublino nel 1997, ha nove anni. Ha gli occhi grandi, azzuri. I suoi capelli sono lunghi, marroni e sono un po' ricciolini.
Ha un grande interesse per lo sport. A le piace molto giocare a calcio con i suoi amici. Ha anche interesse per la X box.
Quasi tutti le dicono che é simpatico e premuroso. Di carattere é bravo, buono e rilassato.
I suoi gusti alimentaire sono un po' strani: non le piace la carne, invece le piacciono la verdura e la frutta, ma ha un debole per la cioccolata.
Adoro le vestirsi alla moda.(I adore dreesing him in fashionable clothes?) Per il sua Prima Communione ha portato un completo Armani nero. Vero, si lo so, sono una madre amorevole Ma é la mia gioia sulla terra.

There are just very few mistakes, I've corrected them in bold. "Le" is the feminine pronoun, the masculine one is "gli". My mother would say, referring to me "Gli piace dormire tutto il giorno" (He likes to sleep all day long) and I'd say referring to her "Le piace farmi arrabbiare" (She likes to piss me off).

Here's the home work once the (few) mistakes are corrected.
